The Bardolino vineyards are
inirorred il lake Garda, in a pre-alpine environment, rich with
Mediterranean colours and perfumes. The mild climate, the
exposition to the sunshine, the perfect balancing between rains
and temperature, the variety of soils (sals, pebbles and clay) the
passion and ability of the producers, all these qualities together
make Bardolino a particulary pleasant wine, highly appreciated at
an international level. A wine one must enjoy first with
one's eyes, while following the wine
itinerary, halting for wine
tasting and appreciation of the panorama.
The itinerary starts from Bardolino, and after calling at
Calmasino goes on towards Lazise, Colą and Pacengo, bending then
southward, up to the Gardesana road. Then its goes forward onto an
international road, and reaches Cavalcaselle and Castelnuovo,
being northward, towards Sandrą and Pastrengo, just at the
opening of the Adige valley. Then the way passes by Piovezzano and
bends towards Cavaion, until it reaches Affi and the feet of the
natural oasis on Mount Moscal. From Affi the wine leads then
towards Albarč, it touches the sweet hills surrounding the garda
rock and goes back to Bardolino. Some internal variants can be
suggested, in the north, like the way from Albarč to Castion,
Marciaga, and Garda, the panoramic road leading from Calmasinoto
Cavaion and Bardolino, the ups and downs between Sandrą and Colą
and the Sona-palazzolo-San Giorgo in Salici triangle.
South-east of lake Garda, in an area which is rich in Risorgimento
memories, the way continues towards San Rocco, Oliosi, Salionze,
from where westbound Peschiera del Garda and southbound Valeggio
sul Mincio can be reached, bending then northbound towards Santa
Lucia ai Monti and leading to Custoza and Sommacampagna, where the
wine tour can be ended. In more or less 70 chilometres seventy
wine farms can be visited, with their cosy cellars, close to
ancient churches, medieval castles, noble villas with their
wonderful gardens, natural parks and futi fairs, archaeological
museums and exhibitions of local traditions, like the wine and oil
museum in Bardolino.

CHARACTERISTICS
|
|
The main varieties of the vineyards
producing the Bardolino are Corvina (35-65%), Rotidinella
(10-40%), Molinara (10-20%) and Negrara (up to 10%). If we observe
the map carefully, we will see that this area has the shape of a
long amphora, divided in two zones. Tho oldest one, producing the
D.O.C. classic Bardolino, embraces the whole territory of the
Bardolino and Garda municipalities of Torri del benaco, Caprino,
Rivoli, Pastrengo, Bussolengo, Castelnuovo del Garda, Sona,
Peschiera del Garda, Sommacampagna and Valeggio sul Mincio (either
a part of the municipal territory or the whole of it).
A total of 16 municipalities, both on the Garda coast and in the
hinterland are included in this area. The soil is chiefly morainic
and prtly fluvialglacial.
From the vineyards of these areas, the following wines can be
obtained:
- Bardolino D.O.C. Classico
- Bardolino D.O.C.
- Bardolino D.O.C. Superiore
- Bardolino D.O.C. Chiaretto
- Bardolino D.O.C. Chiaretto Spumante
- Bardolino D.O.C. Novello
As far as colour, smell and taste are concerned, the Bardolino
has the followings characteristics:

colour: either a ruby-cherry, red changing into a garnet
red with ageing, or pink in the Claret; |

smell: vinous, with a mild, delicate
parfume; |

taste: dry, sapid, slightly bitter, harmonic, subtle,
sometimes slightly sparkling. |
The denomination Superiore (Superior) is assigned to the wine obtained from the best mature grapes of some particular vineyards. They must have undergone at least one year
of ageing, starting from the 1st of November of the year of
production. The Chiaretto (Claret) is obtained through the
so-called "pink" wine-making of the grapes, by following
a traditional method which envisages a partial contact between
skins and must. From the "sparkled" Claret (by using a
natural fermentation) the Spumante brut (dry champagne-type) is
obtained, the first of this kind to be produced in Italy. Another
record, as far as the Bardolino is concerned, was set up with the
Novello (New Wine), which was also the first D.O.C. wine of this
type produced without smashing them, through a ess. This
particular method raw taste typical of new wines. And the Novello
can so arrive at the "deblocage", on the 6th of
November, with its elegant ruby red colour, its fruity raspberry,
strawberry, wild-cherry smell; its fresh, sapid, velvet taste. It
must be bottled within December and preferably drunk within
springtime.

AGE AND
SERVICE
|
|
The optimal
maturation of the Bardolino is between one and three years and it
is considered a wine for every type of dish. The bottle must be
open at the moment. The Bardolino must be served at 16-18°C, the
Chiaretto at 10°C, the Novello at 14°C.
