Gnocchi di patate: an ancient taste without time


The receipt of potatoes "Gnocchi", the ancient popular plate still present today on italian tables, has lost times origins. The preparation is based on the use of genuine ingredients: eggs, soft grain wheat, extravirgin olive-oil, potatoes, salt and a lot of love for good stuffs.

Preparation medium time: about 25 min.
Cook time: about 5 min.

The choice of potatoes is very important, we suggest the yellow wheat ones, very suitable for their consistence and taste.


So let's prepare the Gnocchi!

Choice with care the best potatoes, wash them and after boil, peel them with care, then pass the potatoes still hot inside the passing-machine, and will obtain a soft and consistent purée.
At this point, prepare and stretch it with your  hands on your workbench.

Put on Your workbench, better if a wood-table, the wheat, egss, olive-oil, water and salt, mix with care the paste with the hands stirring energetically, trying to break off the lumps that can create itself during the paste, add slowly an oil wire up to forming a soft paste. If the paste became too dry add a little of water.

Use fork and knife.
As soon as create the paste, left it down for about 3 minutes.
*(You will have so the time for take fork, knife and a plate)

Well! now You can work the past creating small wires of pasta 20-30 cm long. With a diameter for 2 to 3 cm, stretch them along the weath workbench.
As soon as stretched the Pasta wires, cut them into 2,5 cm long pieces, separate them from workbench and put them in a wheaten pot, now you can pass to the final decoration that may suggest excellent ideas for the flavouring.

Use the fork for create some decoration on the Gnocchi's belly, this allows to flavoring to be linked to it and do not rest on the dish. You fantasy will guide you in this phase.


All in pot!
Boil a pot of water, put the salt inside and ther the Gnocchi, as soon as they will came to the surface, drain them with a colander.
And now the flavouring: the  gnocchi fortunately may be flavoured with anything your fantasy suggests, a good wire of  oil extravirgin make them absolute protagonist in their simple, but if You want to taste the best, try our products.


Very important: Dive them in boiling water and drain them only when came to surface.
